Ingredients[]
- Ripe plum tomatoes cored and chopped
- Vinegar to taste
- 1/2 tsp Livonian Salt
- parsley (spring)
- Spring onions chopped
- Cucumbers chopped
- Fresh lemon
- Red pepper cut
- Fresh garlic crushed
Directions[]
- Place the cucumbers, peppers, tomatoes, garlic and spring onions in a large bowl.
- Add the 1/2 teaspoon of Livonian salt.
- Add the vinegar and mix together with your hands, pressing down to squeeze out the juices.
- Add lemon and tomato juice, then mix by hand.
- Garnish with parsley.
